DIPA with Mango and Terpenes 8.0% ABV We're sponsoring the second-annual Sapwood Showdown Disc Golf tournament, May 31-June 1, 2025 at Patapsco Valley State Park! We decided to rely on our brewer (and resident disc golfer) Joe for a suggestion of what style would go over well with discgolfistas, he went with the "synergistic" combination of mangoes and terpenes on a mango-forward DIPA base. Fruity, dank, and crushable!

Dry Arkansas Black Apple Cider 6.9% ABV Arkansas Black apples were first cultivated around 1870 in Benton county Arkansas. The name comes from their deep maroon almost-black color. This cider was pressed from 100% Arkansas Black apples grown in Virginia, with a combination of natural cultures and a wine strain. Then naturally-conditioned for high carbonation! We get big APPLE flavor light acidity, medium tannins, and a waft of tropical fruit!

Wild Ale with Raspberries Aged in Oak Barrels 5.7% ABV This is a blend of two oak barrel-aged beers rested on a colossal 420 lbs of Oregon raspberries (nearly .5 lb of fruit for each bottle)! The beers bring a bright lemony acidity from our house culture. The result is a jammy fruit flavor and aroma, with balancing acidity from the beer.

This is a bigger-maltier-hoppier expression of crackery Pilsner malt, citrusy Tettnang hops, and clean lager yeast! Fine you caught us... it's really just a Helles Bock... but we figured the people who don't read the descriptions all the way would be more interested in something called Imperial Pilsner.

IPA with Pineapple, Coconut, and Vanilla Beans 6.0% ABV Our sorbet series combines hoppy beers with fruit and vanilla, the parfait series adds flaked untoasted coconut! Richer, coconut-creamier, but still bright and drinkable. This installment showcases pineapple juice which creates a tropical vibe with the underlying blend of American and New Zealand hops. As usual a milkshake without dairy!

West Coast Pilsner 5.4% ABV We love Rings of Light and we love West Coast Pilsner... but what happens when we combine them? We double dry hopped a clean, crisp, crackery Pilsner with Citra and Citra Cryo®! The nose is a pure expression of the orange and melon notes of our favorite American hop, without the competition (or synergy) of our house English strain. The flavor is lighter, drier, and crisper - perfect for chilling out on a hot summer day!

Sour Ale with Lemon Juice and Lemon Zest 5.3% ABV We used more than 1,000 fresh lemons in this 200 gallon batch! We made our own oleo saccharum by macerating the zest with sugar, pulling out the aromatic lemon oils. Then we blended this with a sour beer and fresh lemon juice to make a beer that tastes more like lemonade than most lemonades taste like lemonade!

IPA with Nelson Sauvin 7.0% ABV We collabed with a Japanese hop scientist (Kiyoshi Takoi) and the team at Great Dane Brewing to pull every "science" lever we could for the most juicy, fruity, tropical, intense hop expression we could manage! We selected whirlpool hops high in the ester 2-MIB to synergize with the 3S4MP in Nelson Sauvin, along with a unique strain which accentuates tropical aromatics, plus a special "secret sauce" ingredient to push things even further!

DIPA with Vanilla Beans Added 8.0% ABV We first created Vanillafort two years ago as a 10 gallon variant; that single keg of vanilla-bean-infused Pillowfort has finally lead to its first canning run! Talk about rich, dry hopped with over 4-lbs of Citra® and Azacca® plus 30 Madagascar vanilla beans per barrel. The combination of citrus and melon from the hops and creamy vanilla makes for a decedent dessert-like DIPA!

A handful of hop varieties pack such appealing aromatics that brewing with them is like cheating. We named our ever-changing series of IPAs “Cheater Hops” in their honor. We are honest brewers, that’s why we can admit when we cheat! Nectaron is one of the newest coolest hop varieties out of New Zealand. It has some of the same intensity as Riwaka and Nelson Sauvin, but in a much "brighter" citrusy-tropical way. We paired it with Citra to further boost that impression!

Mexican-style Corn Lager 4.6% ABV. We designed this beer to pair with the food from Albura Taqueria. We brewed it with locally grown Pilsner Malt from Virginia and added two types of corn: local heirloom and masa (used to make tortillas). The combination is crisp, clean, with a rich slightly savory corn flavor.

Hazy Pale Ale DDH with Motueka™ 5.6% ABV This spin on our classic "of Light" double-dry-hopped hazy pale is hopped with all bright tropical-lime-tinged New Zealand Motueka throughout. We blended our early and late selected lots from Freestyle for a greater depth of fruitiness with just a little of that Southern Hemisphere weirdness! Motueka is also one of the most haze-positive hop varieties, so expect this one to be pour murky.

British Summer Ale 5.0% ABV Our take on a British Summer Ale. We used our usual house English strain, but rather than load up on intense tropical hops we added just a touch of earthy-floral-herbal Goldings from America and orange-marmalade-tinged East Kent Goldings from England. For grain, we used a blend of two classic English pale ale malts, Golden Promise and Maris Otter to create a slightly biscuity fullness.

Dark Mild with Orange Zest, Coffee, and Vanilla Added 4.8% ABV We love bright fruity natural process coffees, so we enhanced this coffee bean-infused dark mild with fresh orange zest, A small dose of vanilla bean adds creaminess and perceived sweetness without the need for lactose. An easy drinking coffee beer for the warm weather months! This is good for cooking and making a pan sauce.

American Pale Ale with Nelson Sauvin 5.6% ABV We headed a little towards the West Coast with this pale ale, but ran out of gas around the Rocky Mountains. It isn't juicy or opaque... but neither is it a classic bitter-piney-caramely beer. The crisper profile allows the dankness of the Freestyle Nelson Sauvin to shine, bringing a more unique white-winegrape-leaning fruitiness than the usual hop combinations.

Sour Ale Aged in Oak Barrels with Merlot and Cabernet Must 7.7% ABV This is a special beer that has been in the works for more than 3 years. The two barrels spent 30 months aging then six months refermenting on Merlot and Cabernet grape must. Finally extended bottle conditioning makes for a true hybrid of the flavors on mixed-ferment beer and red wine. The deeper vinous notes mingle with the mineral and hay notes from the Brettanomyces.
